ARROZ A LA VALENCIANA

I wanted to share a Nica recipe with you.  It will come out like Doña Pilar's if you are very, very fortunate (well, minus the banana leaf)...man, that woman can cook!!



INGREDIENTS
3 lbs. chicken breasts on the bone
2 cloves garlic, smashed
1/2 onion, wedged
2 Tbsp. salt
2 large carrots, diced
2 large celery stalks, diced
2 large onions, diced
3/4 stick butter
1 small can peas with juice
1 package hot dogs, sliced into rounds
1 1/2 c. ketchup
3 lbs. rice, steamed 

PREPARATION STEPS
1.  Boil the chicken with garlic, onion wedges, and salt until cooked through.  Once cool, shred.
2.  Saute the carrots, celery, and diced onion in the butter.
3.  Once soft, add the peas with their juice, shredded chicken, and hot dogs.
4.  Once warm, stir in the ketchup and pre-cooked rice.

EN ESPAÑOL

INGREDIENTES
3 libras de pechuga de pollo con hueso
2 dientes de ajo, aplastado
1/2 cebolla, en dados 
2 cucharadas de sal
2 grandes zanahorias, picadas
2 grandes ramas de apio, picadas
2 grandes cebollas, picadas
3/4 barra de mantequilla
1 lata pequeña de petit pois (o chícharros o guisantes depende de tu país) con su jugo
1 paquete de hot dog (o salchichas), cortado en círculos
1 1/2 taza de ketchup (o salsa de tomate)
3 libras de arroz al vapor

PREPARACIÓN
1.  Hierve el pollo con el ajo, cebolla en dados, y sal hasta cocido.  Cuando ya está frío, desmenúzalo.
2.  Sofríe la zanahoria, el apio, y la cebolla picada en la mantequilla.
3.  Cuando ya está blanda, añade los petit pois con jugo, el pollo desmenuzado, y los hot dogs.
4.  Cuando todo está tibio, añade el ketchup y el arroz cocido.  Mézclalo bien.
